A Spring Pick Me Up

SLOW ROASTED TOMATOES

Hi ladies...I hope you guys are all doing well. I thought I would include some recipes from the past few weeks.
This was made for our neighborhood lunch bunch friday.
It is Slow Roasted Tomatoes, it calls for regular tomatoes but roma is great for putting on a baguette.

3 medium tomaotes (6 roma)
6 cloves garlic
6 sprigs thyme
3 Tablespoons Olive Oil
Kosher Salt and Pepper

Slice up tomatoes in (spoon out seeds). Spread on cokkie sheet or casserole dish. Scatter the minced garlic and thyme. Drizzle with oil and sprinkle 1/4 tsp salt 1/4 tsp pepper. Bake at 300 for 2-3 hours.

If you kind of saute the garlic and add some red pepper then pour it on it gives a really good flavor with the red pepper.

I thought this would not only be good on a baguette but also tossed with pasta and some veggies.
CARRIBEAAN TACOS



This next recipe I got off of this girls blog. We have made it several times and the kids love it too.

Caribbean Tacos

4 T. Honey
3 T. Fresh Lime Juice
1 T. Oil
2 tsp. Chili Powder
1/4 tsp. Garlic powder
1 - 1 1/2 pounds shredded and cooked chicken


I put the frozen chicken breasts in a crock pot drizzled with olive oil and S&P on high for a couple of hours and them shred it . Mix the honey, lime juice, oil, and spices and toss in the chicken.

Shredded green cabbage
fresh cilantro
salsa
diced mango
flour tortilla

YUMM_O!

I get carried away with recipes because I love them so much. I have a few more but I'll post it next week. I miss you guys a ton. I will see you guys in May for sure. I got some SWEET new running shoes and I am hoping they will pull me through for the race. To be honest I am not training as hard as I should. I don't have the time (or maybe it's the dedication) but I am going to do it the best I can and then hopefully do one a few months later.
Em...how's the play going? I can't wait to see you in your element! Steph how is work? The Guitar? I had to take mine to go get the neck adjusted so I will be guitar less for a week:(
Molly and Kristi how's the running going girls? Getting my butt in gear to be consistent is not happening. I will be o.k. though. I am getting a bit nervous about trying to get pregnant with all that running too. Hopefully I will be able to.

Ang-I am so making those tacos this weekend. We need to share more recipes. Our (and when I say "our" I really mean you and Lee's) tastes and style of cooking is similar. Keep up the 1/2 marathon training. It's not easy but you'll love yourself when you finish! I have a shirt that says "The woman who starts a race is not the same woman who finishes the race." Very true.
Meegz- I love that you are joining the blog. You're technically a Logan Lady too. I want to know what you're up too also!
